Does anyone have any info on the ranking system and how it works within the 1v1 servers? Also where could we find our stats as well?

You can find the stats page for all our servers here. On the 1v1 stats page you can search your steam username and it should come up with your stats.

By default you start with 1500 points and you gain points for winning and lose points for losing the 1v1. The points are based on the level of the other player. If you are both equal then you will win/lose 4 points. For example say the other player is way better than you and you lose than you would lose less points and the opponent would gain less points. The opposite is also true.

There is also rank decay so if someone is inactive their points will go back to 1500 over time.

What about retakes stats?

We currently don't have a retakes stat page. This would be a question for sneaK sneaK. The points system is very similar for retakes.
